Executive Chef & GM
Behind the project is our Danish GM and Executive Chef, Chef Nik, and our Thai Executive Sous Chef, Chef Mel. Chef Nik brings decades of international culinary experience, having worked in hotels and restaurants worldwide since the early '90s, including a decade as a corporate chef in Asia and the Middle East. Chef Mel, with over 15 years in Bangkok's culinary scene, has experience with international upscale brands and fine dining, as well as running his own food truck. Together, they form a dynamic Mentor/Protégé duo, leading our team with their diverse backgrounds and shared commitment to sustainability and hospitality.
